This is a very simple meal idea - roast lamb - cooked at a low heat for 3 hours and some roast carrots and parsnip along with some roast sweet potato 'fries'. Perfect for a Sunday dinner.
Green Bean Almandine: Trim the green beans (450g) and simmer for 6 to 7 minutes. Melt 60g butter in a frying pan and saute the 225g of shiitake mushrooms until brown. Add salt (half a teaspoon) and 30g sliced almonds. Add the beans to the frying pan and toss well. Cook for 4 more minutes.
This one is from a book called Primal Blueprint Quick and Easy Meals. Melt butter in a pan. Add half an onion and 10 chopped radishes. Saute for 5 minutes. Add cooked pork cut into small pieces and beef or chicken stock. Simmer for 5 more minutes until liquid is evaporated.
This is a very simple meal idea - roast chicken with leek, courgette and spinach.  Put the chicken portions in the oven and cook at 200 Celsius for about 45 minutes.   Add the sliced courgette and leek to a pan and cook in coconut oil until soft. Add some cream and then half a bag of spinach and cook for a few minutes more until the spinach has wilted.
Portabello mushrooms and cheese grilled along with a tasty salad (avocado, spinach, olives, peppers) and whatever else you fancy..
Low Carb Peppermint Hot Chocolate   All you need is 1 Atkins chocolate mint bar, 100 ml unsweetened almond milk and 2 tablespoon unsweetened cocoa powder.  To make it: Add the almond milk to a pan over medium heat and slowly whisk in the cocoa powder until combined. Add sweetener if preferred. Add the chopped Atkins bar and allow to melt, stirring constantly. Serve immediately, topped with whipped cream if preferred.
