Muffin in a Minute aka MIM

A muffin in a Minute is delicious, very quick (just one minute to cook) and very easy (the most difficult part is breaking an egg)! It is an excellent breakfast option  and a great source of fiber.

The main ingredient is flax meal (also called linseed). You can buy them in most supermarkets in Ireland like this one in Tescos, in Superquinn and in health shops like The Health Store, Holland and Barrett or your local veg shop.

Ingredients:

  • ¼ cup flax meal
  • ½ teaspoon baking powder
  • 1 packet granular sugar substitute (sucralose)
  • 1 teaspoon cinnamon
  • 1 large egg
  • 1 teaspoon butter

Muffin a Minute Ingredients

Directions:
  1. Put the dry ingredients in a coffee mug. Stir.
  2. Add the egg and the butter. Mix.
  3. Microwave for 1 minute.
  4. Take out and slice, butter and eat. (Also delicious with cream cheese).

      Thanks for asking, the MIM is a delicious snack to have and so easy to make. Lovely with cream cheese or butter.

  1. I have an underactive throiyd as well, yet I still lose weight at a normal rate. (2-4 lbs a week) I exercise and eat well, and it shows. Don’t let fatique get the better of you. You can do this, even if that means walking for only ten minutes a day. That’s sure a lot better than sitting around wishing you could exercise for an two hours. It’s great that you already love to be active!Keep a positive outlook on life and laugh often, this will give you energy and make you more positive towards losing weight. Remember, a sucessful diet has to be a lifestyle change. When you reach goal, don’t stop eating fruit and veggies and exercising.Losing weight with a sluggish throiyd is a challenge, but defintely far from impossible!
