A muffin in a Minute is delicious, very quick (just one minute to cook) and very easy (the most difficult part is breaking an egg)! It is an excellent breakfast option and a great source of fiber.
The main ingredient is flax meal (also called linseed). You can buy them in most supermarkets in Ireland like this one in Tescos, in Superquinn and in health shops like The Health Store, Holland and Barrett or your local veg shop.
- ¼ cup flax meal
- ½ teaspoon baking powder
- 1 packet granular sugar substitute (sucralose)
- 1 teaspoon cinnamon
- 1 large egg
- 1 teaspoon butter
- Put the dry ingredients in a coffee mug. Stir.
- Add the egg and the butter. Mix.
- Microwave for 1 minute.
- Take out and slice, butter and eat. (Also delicious with cream cheese).
